I have led sourcing and procurement projects throughout my career. Can I use those projects for PMI work experience towards the PMP certification?

Yes you can - supply chain management is part of procurement management which is a project management domain according to the PMBOK. You can claim these projects as PM experience towards your PMP certification.

Only you can decide this.  Please download the PMI Certification Guide for the PMP at http://www.pmi.org/en/Certification/~/media/PDF/Certifications/pdc_pmphandbook.ashx.  If your work meets the criteria in your judgment, you can use it.
